If you don’t have subscribers than you can’t measure the repeat business accurately. There are ways of doing it but subscribers are the easiest and they can tell you want appeals to them and you can try to appeal to them.

I would agree that sometimes the # of subscribers is really irrelevant to the success of a website. Nowadays people can fake the subscribers count, which is quite a shame. And plus… in the end it is all about the quality of the subscribers, like you mentioned with the 20,000 vs 2,000 scenario you told us.

Really in the end what you should be focusing on is delivering a high quality website, and the rest will come with time.

You are very right in impressing on keeping tabs on how many subscribers you get, when you have monetized your blog. Otherwise, it is of only academic interest.
